Hi Vista Vineyard is a certified sustainable vineyard owned by Dan Hountalas, longtime proprietor of Cliff House Restaurant in San Francisco; and managed by Ned Hill, whose family has managed reputable Carneros vineyards for generations.
Carneros provides for a cool growing season, producing grapes with lovely fresh citrus and melon aromas. We barrel ferment a small portion of the wine to add mouth feel and texture; the balance is tank fermented cold to preserve its vibrant melon and citrus aromas. The combination is then stored in stainless steel on the light lees before bottling. No malolatic fermentation is used, resulting in a crisp acidity on the palate.
